Zucchini Bread

2 – cups zucchini

3 – eggs (lightly beaten)

1 – cup olive oil (extra light); can substitute with apple sauce

1 – cups sugar; can substitute with splenda

2 – teaspoons vanilla

3 ¼ – cups flour

1 – teaspoon baking powder

1 – teaspoon baking soda

3 – teaspoons cinnamon

3 – teaspoons salt

1 – cup chopped or ground nuts

 

Optional: add to wet mixture

1 – cup raisins

1 – pineapple (drained)

 

Mix together:  zucchini, eggs, olive oil, sugar and vanilla.

Separate bowl: combine flour, baking powder, baking soda, cinnamon, salt and nuts.

Add the dry mix to the wet mix.

Bake at 350 degrees for 1 hour.

Makes 2 loaves.
